Each day, the team had to switch off the doughnut line and wait for the fat temperature to drop considerably from 180°C. This cooling process was necessary before they could dump the oil through a paper filter screen into a standalone tank. Once filtered, the oil had to be poured back into the doughnut line. To accelerate this cooling process, the bakery positioned numerous pillar fans around the doughnut line, significantly increasing energy consumption and operational inefficiency.
